Medu vada is a delicious south Indian snack. It can be made using less ingrediants. It can be used as sidedish with breakfast or a standalone evening snack. Favorite for kids.
Ingredients
Urad Dal
Onion – 2 nos
Green Chillies – 2 nos
Curry Leaves – 10 nos
Raw rice – 2 Tablespoon
Rava – 1 Tablespoon
Salt – as required
Cooking Oil – 1/2 Litre
Directions
Tak a cup of urad dal along with 2 tablespoon of raw rice and clean it using fresh water 2 to 3 times. Soak it in water for about 30 minutes.
Meanwhile chop onion, green chillies and curry leaves. Keep it aside.
After 30 minutes, grind the urad dal using mixer grinder or wet grinder to get vada batter. The consistency should be in a semi solid thickness. When a little batter is dropped in water, it should float.
Add chopped onion, green chillies, curry leaves, 1 tablespoon rava and salt as required into the vada batter and mix it well.
Keep a big size pan in stove, pour half litre cooking oil and wait till it heats (around 10 minutes in medium flame). Test the heat by adding a little drop of vada batter and make sure it rises quickly.
Take a lemon size batter in hand, place a hole using finger and drop it in oil pan. Depending on pan size, 4 to 6 vada can be made at once.
Wait till the vada get fried and take it out when the colour changes to golden brown and place them in plate spreaded with kitchen tissue at the bottom.

Tastes better with Coconut Chutney / Sambar / Kara Chutney.
Best sidedish for breakfast like Idli, Dosa or Pongal.
