Mutton Briyani is an all time favorite lunch / dinner for youngsters and kids. It is rich in taste, healthy and delicious to eat.
Ingredients
Mutton -1/2 Kg
Rice (Basmati) – 500 kg
Green Chillies – 3 nos
Chilli Powder – 1 Tablespoon
Corriander Powder – 1 Tablespoon
Gram Masala – 1 Teaspoon
Turmeric Powder – 1/2 Teaspoon
Cinnamon – 2 Piece
Cloves – 4 nos
Fennel seeds – 1/2 Teaspoon
Bay Leaves – 2 nos
Black Cardamom – 2 nos
Onion – 3 nos
Tomato – 2 nos
Curry Leaves – 10 nos
Corriander Leaves – 5 stems
Mint Leaves – 10 stems
Curd – 4 Tablespoon
Salt – as required
Cooking Oil – 6 Tablespoon
Ghee – 2 Tablespoon
Directions
Take 1/2 kg basmathi rice in a vessel. Measure it with a measuring cup and note the quantity. Wash it for 3 to 4 times. Soak it in fresh water for 1 hour.
Meantime, cut 1/2 kg mutton into medium size pieces, and wash it thorougly. Add turmeric powder while washing.
Put the mutton in a pressure cooker. Add water till all mutton immerses completely. Add salt as per taste and 1/2 teaspoon turmeric powder in it.
Pressure cook it for 5 to 6 whistles. Wait till pressure drops. Transfer half cooked mutton into a seperate bowl along with the water and keep it aside.
Chop onion, tomato and green chillies.
Keep the same empty pressure cooker in stove, Slightly heat it till water evaporates. Then add 6 tablespoon of oil and 2 tablespoon of ghee.
Let it heat for 2 minutes. Add 2 cinnamon pieces, 4 no of cloves, 2 bay leaves, 1/2 teaspoon of fennel seeds and 2 black / green cardomom in it.
Fry the ingrediants for 1 minute in medium flame. Then add green chillies in it and immediately add onion and continue frying till onion turns golden brown colour.
Add ginger garlic paste and continue frying till raw smell leaves.
Add tomato and continue frying for 2 to 3 minutes.
Add the half cooked mutton pieces without water. Fry it for another 1 minute.
Then add spices, i.e., 1 tablespoon of red chilli powder, 1 tablespoon of corriander powder, 1/2 teaspoon of garam masala and 1/2 teaspoon of turmeric powder.
Mix them well and 4 tablespoon of curd. Mix it well again.
Add salt as per taste. Add curry leaves, corrinder leaves and mint leaves as needed (1/2 of everything).
For every 1 cup of rice, 1&1/2 cup of water has to be added. If you add 2 cups of rice (for example), then add 3 cups of water.
While adding water, first add mutton cooked water kept in vessel. Then add normal water if additionally needed as per our measurement.
Once u finish adding water in the pressure cooker, add soaked basmathi rice without soaked water.
Close the lid. Keep the stove in medium flame. Pressure cook for 1 whistle.
Turn off the stove. Wait for 5 minutes. Then manually release the pressure by removing the cooker weight. Wait till complete pressure relases.
Open the lid. Add remaining curry leaves, corriander leaves and mint leaves. Then mix the briyani gently.
Delicious Mutton Briyani is ready !
If necessary, close the pressure cooker using lid. Do not add weight. Wait for another 5 minutes to get better aroma in briyani.
Notes
Serve with Onion raita for better taste.
