Mutton Curry is a traditional south Indian recipe. This is a multi purpose recipe suitable for rice as well as tiffin items such as idli, dosa, chappathi, parotta, naan etc.,
Ingredients
Mutton – 1/2 kg
Onion – 2 nos (Medium Size)
Tomato – 1 no
Dry Chillies – 6 or 7
Coriander Seeds – 2 Tablespoon
Cinnamon – 1 Piece
Cloves – 3 nos
Fennel Seeds – 1 Teaspoon
Cumin Seeds – 1 Teaspoon
Pepper – 1 Teaspoon
Coconut – 1/4 Coconut
Bay Leaf – 1 no
Black Cardomom / Green Cardomom – 2 nos
Curry Leaves – 10 nos
Coriander Leaves – 4 Stems
Cooking Oil – 6 Tablespoon
Turmeric Powder – 1/2 Teaspoon
Garam Masala – 1/2 Teaspoon
Salt – as required
Ginger Garlic Paste – 1 Tablespoon
Directions
Cut mutton meat in required size, wash using water and turmeric powder.
Take a pan, add 1 tablespoon of oil wait till it heat.
Keep the flame in medium, then add cinnamon, cloves and corriander seeds. Continue frying for 10 seconds.
Then add red chillies, fennel seeds, cumin seeds and pepper seeds in it. Continue frying.
Add grated / sliced coconut and continue frying for 1 minute. Then transfer the contents to a plate.
Cut 1 onion and 1 tomato into small pieces.
In the same pan add 1 tablespoon of oil and fry the onion and tomato for 2 to 3 minutes.
In a mixer jar add the contents of the plate and grind it coursely. Then add the fried onion and tomato into it.
Grind it into smooth paste. Add water as per requirement.
Take a pressure cooker, add 4 tablespoon oil, wait till it heats up and then add 1 bay leaf and 1 or 2 black cardomom. Fry it for 10 seconds.
Add a chopped onion into it and continue frying for another 2 minutes.
Add ginger garlic paste and keep frying till raw smell leaves.
Add washed mutton into it. Fry it gently for 5 minutes.
Add the paste from mixer jar and continue frying for another 5 minutes.
Add garam masala, turmeric powder and salt as per taste. Continue frying for another 1 minute.
Add 5 curry leaves in it and then pour 500 ml of water into it.
Close the lid and pressure cook for 6 to 7 whistles depending on softness required in medium flame.
Turn off the stove, wait till pressure drops. Open the lid and add corriander leaves and remaining curry leaves into it. Mix well.
Tatsy Mutton Curry is ready !
Notes
It goes better with Idli, Dosa, Naan, Chappathi, Parotta etc.,
It also goes better with rice as gravy.
