Egg is a rich in protein food used by almost everyone across India. Egg masala is a delicious side dish for lunch and dinner cooked with boiled egg. Rich in taste and favorite for kids.
Ingredients
Egg – 2 nos
Onion – 1 (Medium size)
Tomato – 1 (Medium size)
Cooking Oil – 4 Tablespoon
Turmeric Powder – 1/2 Teaspoon
Chilli Powder – 1 Tablespoon
Coriander Powder -1 Tablespoon
Garam Masala – 1/2 Teaspoon
Mustarad Seeds – 1/2 Teaspoon
Fennel Seeds (Sombu) – 1/2 Teaspoon
Curry Leaves – 6 nos
Corriander Leaves – 2 stems
Salt – As required
Directions
Boil 2 eggs in a vessel for 10 minutes.
Parallely finely chop onion and tomato.
Remove husk from egg by sinking it in regular water. Slit egg on 4 sides so that masala can mix with it and give rich taste.
Take a pan and add 4 tablespoon of oil and heat it for 1 minute.
Add mustard seeds, wait till it pop. Then add fennel seeds, curry leaves and onion and fry it till golden brown colour is obtained.
Then add chopped tomato and fry till it completes smashes.
Sim the flame and add salt, chilli powder, corriander powder, turmeric powder and garam masala.
Mix it well and continue frying for 2 more minutes.
Add 4 tablespoon of water (depending on required consistency) and add egg.
Keep mixing the masala for 5 more minutes.
Stop cooking as per required consistency / thickness. Sprinkle finely corriander leaves for better flavour.
Spicy Egg masala is ready!

Best suited as sidedish for sambar rice, meals etc.,
Can also be used as side dish for chappathi.
