Venpongal is a delicious easy to prepare breakfast. It is a good alternative for regular breakfast. Very less preparing and cooking time. Suitable for beginners too. Energetic and can hold hunger for 4 hours till lunch.
Ingredients
Raw Rice (Pacharisi) – 1 Cup
Moong Dal (Pasi Paruppu) – 1/4 Cup
Salt – As required
Cooking Oil – 2 Tablespoon
Pepper – 1 Table Spoon
Cumin (Jeeragam) – 1 Tea Spoon
Ginger – Small piece (Coin size) – Grated / crushed
Curry Leaves (Karuveppilai) – 10 nos
Asafoetida Powder (Perungayam) – 2 pinches
Ghee – 3 Tablespoon
Cashew Nuts – 10 nos
Directions
Take 1 cup rawrice and 1/4 cup of moong dal in a bowl and wash it in clean water 2 to 3 times.
Soak it for 30 minutes.
Take pressure cooker and add 4 cups of water using same cup used to measure rawrice.
Add soaked rawrice + moong dal without water in the cooker.
Add salt as per requirement and turn on the stove, close lid and pressure cook it for 3 to 4 whistles.
Turn off stove. Wait till pressure releases. Open lid and mix it well and keep is aside.
On a separate pan add 2 tablespoon of oil and heat it for 1 minute.
Add pepper + cumin seeds + grated ginger + asafoetida powder + curry leaves and mix well till it fries.
Add the above in venpongal kept in cooker.
In the same pan add 3 tablespoon of ghee, heat it for 1 minute and then add cashew.
Mix well it turns golden brown colour. Add it in venpongal kept in cooker.
Mix well till oil and ghee spreads evenly.
Your venpongal is ready!
